I'm currently listening to the harmonious sounds of my two daughters playing together nicely. It's a fleeting moment, I know, as soon there will be someone whining that the other isn't sharing the Party Pony with the cute hats. Somehow my oldest daughter inevitably ends up with most of the toys while the younger one gets by on one or two novelties. Cora fails to see how this uneven distribution of products is unfair... but Adelle is sly, so I know Cora's time is coming.
It's northern Indiana and it's February which should equal cold temperatures, even bitterly cold wind chills of 30 below. But instead our high today was nearly 50 degrees (F). Hmm.. the product of global warming or just a warm winter, I wonder? My hope for snow has not abated just yet as we have plenty more weeks of winter. In the meantime, I'll pretend it's really cold outside and cozy up to a hot bowl of soup.
Southwest Chicken Soup
1 TBSP grapeseed oil
1 small onion, minced
1 red, orange or yellow bell pepper, diced small
1 TBSP chili powder
1 tsp ground coriander
1 tsp cumin
1 jalapeno, seeded and minced
8 cups chicken broth (gluten-free)
2 tomatoes diced or 1 can diced tomatoes with juice
1 can black beans
1 cup frozen corn
3 cups cooked shredded chicken
salt and pepper
Optional garnishes: avocado, tortilla chips, cilantro, sour cream, cheddar cheese, black olives
In a dutch oven or stockpot, heat oil over medium heat. Saute onion and bell pepper until softened, about 5 minutes. Add chili powder, coriander, cumin and jalapeno, stirring constantly for 1 minute. Add chicken broth and tomatoes. Bring to a low simmer. Add chicken, beans, corn and salt and pepper. Cover and cook another 5-10 minutes. Serve.
