I have never enjoyed fried meat more than in the last couple of months of going low-carb and grain-free. Any guilt I used to harbor for eating bacon, breakfast sausage, or chicken with the skin on it is long gone. Now I regularly revel in cooking with bacon grease, lard, and other good-for-you fats. In many ways, I feel as though the low-fat burden has been lifted from me, and instead of counting fat grams and calories, I just cook and eat and feel good about it all.
One of my old stand-by recipes back in our wheat-eating days was fried cubed steak. It's a recipe I grew up with, so I really wanted to come up with a gluten-free and grain-free version. Thanks to the miracle of almond flour, this recipe is simple, easy and low-carb. Hello, old friend... we meet again.
Fried Steak
1 1/2 lbs cubed round steak
1/2 cup almond flour
1 tsp salt
pepper to taste
1/2 tsp garlic powder
oil or lard for pan frying
1. Heat oil or lard in a large non-stick skillet over medium heat.
2. In a shallow bowl or dish, combine almond flour, salt, pepper and garlic powder. Place steaks in flour to coat all sides then put into hot skillet. Pan fry until outside coating is brown and internal temperature is 165 degrees, about 15 minutes. Be sure to turn steaks as they brown to avoid burning almond flour. Serve.
