Well, you deprive a child long enough and pretty soon they come around to liking other food -- that's what I've learned. Suddenly, Cora not only TRIED the home fries James made, she declared that she LOVED them. Say what?? It may sound like a no-brainer to a lot of you out there -- after all, what child out there doesn't like french fries, right? This was a big step for us, though. Not only were these different from fast food or frozen fries, they were much thicker, thus resembling the texture of a baked potato. And for us, that was a victory -- way to go, Cora.
2 TBSP oil (grapeseed, olive, canola, etc.)
2 tsp salt
1. Preheat oven to 400 degrees.
2. Cut potatoes into 1/2-inch strips. Place into a large bowl and fill with enough cold water to cover the potatoes. Soak for about 10 minutes. Place potatoes in colander and rinse to remove starch. Wipe bowl dry and put potatoes back into bowl.
3. Pour oil into bowl and toss potatoes to evenly coat. Sprinkle in salt (and pepper if using) and toss again to coat. Lay potatoes on a baking sheet in a single layer. Bake about 40 minutes until bottoms are browned and tops are beginning to brown. Serve.
