Well, our upcoming trip to Riley Hospital for Children is quickly approaching: January 20th, just over a week away. I'm hoping Adelle's labs will be improved and that this will be our LAST trip to Riley, not that I'm getting my hopes up or anything (wink wink). Unfortunately, she does seem a bit more tired lately, which kind of concerns me. However, I think she may be making up for some lost sleep around the holidays. We had some busy days without naps, or she wouldn't nap because her older sister was home from school on Christmas break. And she had a bad habit of waking up around 6am, which is way too early for her. So perhaps her body is just catching up on some lost sleep and her tiredness is not a reflection of her immune system status. At least that's what I'm hoping for, because to be honest, I will be a little devastated if her immune system is the same or worse. But.... no reason to get all sad and weepy about that now when I don't know a thing about how her body is really doing! We'll just keep our fingers crossed!
We made these tacos last night and boy, they were tasty! Sadly, I used to think the only way to make taco meat taste good was to buy one of those seasoning packets at the grocery store, you know the ones next to all those other seasoning packets for fajitas, lasagna, salisbury steak, etc. I thought the great people at Old El Paso or whatever company had some kind of mystical knowledge about the flavors of tacos. Turns out, they don't -- and you can make great-tasting tacos at home with your own ingredients and spices. Who knew, right?
Beef Tacos
1 lb ground beef
1 onion, minced
2 cloves garlic, minced
1 tsp cumin
1 tsp ground coriander
1 TBSP chili powder
1/4 tsp black pepper
1 tsp sea salt
Sauce:
1 cup tomato sauce
1 TBSP brown sugar
2 tsp apple cider vinegar
1 tsp Worcestershire Sauce
1. Heat a 12-inch non-stick skillet over medium heat. Cook ground beef, breaking up large clumps until almost done (some pink pieces will remain). Add onion, cumin, coriander, chili powder, black pepper and sea salt and continue to stir and cook until all the beef is browned and the onion is tender. Add the garlic and cook an additional 30-60 seconds.
2. In a small bowl, combine tomato sauce, brown sugar, cider vinegar and Worcestershire sauce. Pour sauce over beef, stir to mix and continue to cook until sauce has thickened, about 1-2 minutes. Serve in your favorite taco shells or as a topping for a taco salad.
